Recipe of the day: Eggplant Timbales
You'll need:
1 eggplant, pared and cut in 1/4 inch slices
1/4 cup butter
1/2 cup soft, stale bread crumbs
2 eggs, well beaten
Few drops onion juice
1/2 teaspoon salt
1/8 teaspoon pepper
Canned pimientos
Buttered crumbs
Parsley
1. Cook eggplant in boiling, salted water until soft.
2. Drain thoroughly, mash, and add butter, crumbs, egg, onion juice, salt, and pepper.
3. Line small buttered molds with pimientos.
4. Fill with mixture, sprinkle with buttered crumbs, and bake 15 minutes at 375 degrees.
5. Remove from molds and garnish with parsley.
The mixture may be baked in a baking dish.
